The Chemistry That Isn’t on the Label: Antimicrobial Washes in U.S. Broiler Processing

Overview of the American Broiler Chicken Industry
The broiler supply chain is among the most vertically integrated in American food production. Unlike beef or pork, where independent ranchers and farmers retain ownership of their animals and sell them at market, the broiler system is organized around large integrators that own the genetics, hatcheries, feed mills, processing plants, and distribution networks. Independent contract growers provide land, housing infrastructure, and labor, but raise birds on company-supplied stock and feed under terms set by the integrator. This structure concentrates market power, production risk allocation, and information asymmetry in the integrating firms.
